Then the signed bike path goes to alongside the street instead of on the street.

see sign for Steinegg / Collepietra, cross the main SS12 road and start climbing SouthEast or East.
from here, follow signs for Welschnofen
around here is the high point of the first main climb up the northeast side of the ridge. Next it crosses to the southwest side of the ridge with some ups + downs into and thru Welschnofen
turn Left for Welschnofen / Nova Levanta
here turn Left and join the main road up through the Eggental and climb steadily up to the Karerpass / Passo Costalunga

lots of horses around here
elevation of the pass is 1745 meters -- several food options. On the other (East) side of the pass is the Val di Fassa -- the road continues down to Vigo di Fassa. But on this ride we're turning around back to Bozen / Bolzano.
Here turn Right and follow road for Nigerpass / Passo di Nigra and for Tiers / Tires

after this just follow the bike path in reverse back to Bozen / Bolzano. Here it soon turns Right (North) off the road and goes down by the railroad track.

Gives a couple of ways to get between the Adige river valley and the main pass to the "heart" of the Dolomites -- which avoid some of the higher-traffic sections of roads. Also the road through and above Steinegg is rather pretty -- I'd ride from Bozen up to the ridge above Steinegg and go back the same way just for fun even if I didn't care about getting to the Karerpass or the Dolomites. To me the key is to avoid the long tunnel at the bottom of the Eggental road (even though it's closer to Bozen). The only disadvantage to going through Steinegg to the Karerpass is that you end up on the main Eggental road anyway -- but higher up where it has less traffic. And the bike path from Bozen to Blumau is kind of interesting in itself.
This route not checked by me since 2008.
