This is a very hilly route and in parts would be quite dangerous. The route down the back of Bellevue Hill is quite steep downwards, somewhat twisting and should be attempted only by experienced cyclists. The route up New South Head Road is very steep from Dover Road to Hopetoun Avenue. The route from this point down to Watsons Bay is generally downhill, but it is quite fast and needs care. From Watsons Bay to Military Road the route is quite steep and you are fighting heavy traffic at times. Military Road is basically downhill, but it is narrow and has a lot of traffic. The route from Bondi upwards is steep and requires considerable fitness.
Generally, the route is challenging and suitable for a fit and competent cyclist who is used to heavy traffic and a lot of hills

My route goes in the reverse way to how mjfdcj describes it, ie goes from Bondi to Watsons Bay via Dover Heights and DOWN Old South Head Rd, then up via Hopetoun Av to New St Head Rd. I think it is slightly easier that way. The climb up Bellevue Hill is long and somewhat steep. May be better to go via Drumalbyn to Victoria Rd to ease the gradient a bit. I dont think it is dangerous if you are careful and brakes are working.
